Snow Day Tomato Soup!
We had a wonderful Snow Day with the Saints this past Sunday. We served almost 100 grilled cheese sandwiches and a giant pot of homemade tomato soup. Many asked for the recipe for this delicious and easy dump recipe so here it is! It’s even perfect for a Lenten Friday!
Creamy Tomato Soup
2 tablespoons butter
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon dried basil
8 ounces cream cheese
1¼ cup milk
2 cans condensed tomato soup
2 cans diced tomatoes
15 ounces tomato sauce
½ teaspoon pepper
½ teaspoon salt
INSTRUCTIONS
In a large pot sauté the chopped onions and minced garlic with butter over medium heat.
When translucent add basil and cream cheese to the pot. Break up the cream cheese and add milk. Heat until cream cheese is melted and mixture is warm.
Stir mixture in pot and add cans of tomato soup, diced tomatoes, tomato sauce, salt and pepper.
Stir ingredients together. Using an immersion blender blend together all the ingredients till a desired smooth consistency is reached.
Allow soup to simmer for 15 minutes before serving.
